The Growing Chefs program is a fantastic initiative for students in grades one to seven to learn about and engage with the food cycle, get hands-on experience cooking their own food, and support urban agriculture and growth. Volunteer chefs dedicate their time to give kids in communities across the Lower Mainland and Vancouver Island the opportunity to plant their own seeds, harvest their own vegetables and learn basic cooking skills in a fun and dynamic educational environment.

Drew’s Catering & Events founder and head chef Drew Munro has been involved with the organization for two years. Last month, he took the time to lead two classes of grade three and four students at Vancouver’s Graham Bruce Elementary School. The students learned about the science of the plant growing process, with hands-on activities that help them grasp concepts and engage with the material more easily.

“The Growing Chefs program is experiential so the students get to learn in a hands-on environment with chefs who are working in the field. We bring in healthy foods that the students can cook with and try. Some of the students are new to Canada so it’s a fun new experience for them,” Drew explains. “The newcomer students also get the chance to try vegetables they may have seen before but never tasted.”

Students enrolled in the Growing Chefs program also learn about healthy eating habits, sustainable food practices and plant-based recipes. Students grow and harvest their own vegetables, which they then prepare with the help of volunteer chefs like Drew. The program runs every two weeks, giving kids the opportunity to tend to their vegetables and regularly show their progress to their chef teachers.

“The students are very proud of the vegetables that they’ve grown and the progress that they’ve made,” says Drew. “ They then harvest the vegetables they’ve planted and grown and the chefs help them prepare the vegetables into meals so that the kids learn that vegetables don’t just have to be bought in the grocery store. They can be grown at home and can even be grown in a balcony or inside in a classroom. I think that’s the most empowering aspect of the program.”

 

Growing Chefs has helped grow 368 gardens and equipped 9000 students with the skills to grow their own food and cook. Get in touch and learn how you or your children can get involved with this wonderful organization.

There’s nothing quite as exhilarating for chefs as seeing the first way of vibrant green Spring vegetables start appearing in the kitchen after the long, cold winter. As Spring turns to Summer, the greens are punctuated by vibrant local berries, ripe stone fruits, summer squash, heirloom tomatoes and a multitude of fresh herbs. What a time to cook! With this wave of new ingredients comes the creation of our new Spring/Summer menus each year.

New Minimum Order Amounts:

 Effective June 1st, 2019 we will be changing our minimum order amounts as follows:

New Minimum Order Amount: $600

Sunday Minimum Order: $750

Holiday Minimum Order: $1000

We are aware this new minimum order may be difficult to reach for smaller events, and as such our team has established partner vendors who are able to provide high quality, reliable service at lower minimums. Our Booking Team is able to make a seamless transition between these partner vendors to ensure there are no gaps in service for pending orders. Any orders placed before June 1st will be honoured at our old minimums.

Why are we changing the minimums?

When Drew’s Catering & Events was founded nearly 10 years ago, its goal was to be an event catering company specializing in customized menu offerings and high-level service. During that time, the feedback we received from our clients was that a significant need existed in the market for quality drop off style corporate catering, and we began to offer and grow this service to provide value for our clients.

Over the last several years, exciting things have happened in the food delivery market. New services and apps have been created to help fill this market need, and it has never been easier for organizations to order high-quality, prepared food from a range of providers for their smaller meetings or get-togethers.

Seeing this evolution has been exciting to watch.  We have always believed the best value we bring to the market is in our team’s ability to bring memorable service to larger functions and events with our award-winning service team and food. These factors are what prompted us to make these changes to our minimums to focus on what we feel we do best for our clients.

These changes further reflect our commitment to our company’s original focus and will allow us to dedicate more resources towards adding value to our clients’ events every day.

Whether it’s a drop off style service, full-scale conference, product launch or staff party, our entire team is here and ready to make your event a resounding success.

This morning our owner Drew was welcomed back to the CTV Morning Live Vancouver headquarters in downtown Vancouver to perform another plant-based comfort food cooking demo! Our vegan mac ‘n cheese was such a hit, he decided to cook another great Fall classic comfort food dish with a plant-based twist – Baked Ziti!

Baked Ziti is an Italian-American influenced dish traditionally featuring pork sausage, fire roasted peppers, ricotta, tomato sauce, ziti pasta and baked with cheese until golden and brown. This plant-based version delivers all of the satisfaction with none of the animal products!

Vegan Baked Ziti (Serves 8)

  • 400 gr brown rice tube shaved pasta such as ziti or penne rigate
  • 200 gr plant based ground beef sausage, such as Yves or Beyond Meat
  • 280 gr Roasted Bell Peppers, cut into julienne strips
  • 80 Gr Kale, sauted in a pan with olive oil and salt
  • 2 cloves finely minced garlic
  • 8 gr fennel seeds, lightly toasted
  • 275 ml tomato sauce
  • 1/2 cup cashews, soaked in water for at least 2 hours, then blended into a puree in a Vitamix or blender
  • Freshly Chopped Herbs for Garnish
  • Olive Oil for Garnish
  • 30 gr shredded dairy-free mozzarella, such as Daiya

Method:

Boil a pot of salted water and cook pasta according to package directions, until al dente. Rinse under cold water until ready to use. In a medium sauce pot, simmer tomato sauce and fold in the cashew puree to make a rose sauce. In a saute pan over medium heat, saute the plant-based sausage, garlic and fennel seeds for 4-5 minutes until slightly browned. Set aside. In a large mixing bowl, combine the cooked pasta, sauteed kale, peppers, sausage and tomato sauce and mix until evenly combined. Place the mixture into an oven-safe casserole dish, and top with the cheese.

Bake at 350F for 30-35 minutes until browned and hot throughout. Garnish with a drizzle of olive oil and freshly cut herbs. Enjoy!

Fall is in the air and very soon we’ll be planning some of our most special gatherings around the Holidays, surrounded by friends, family and great food! We’re always so grateful that each year we get to be a part of so many wonderful corporate and private celebrations of this special time of year, and releasing our Holiday Menus each year is something the entire team looks forward to.

And we are absolutely THRILLED to announce that our popular Holiday Pick-Up service is back for both Thanksgiving AND Christmas! We had such a great response last year that it was a no-brainer to offer this service to our clients again this year. Based on the feedback we collected, we’ve improved

This year, we’ve decided to offer a plant-based turkey alternative on both of our corporate packages, as well as our pickup menu. Drew and our kitchen team have developed a delicious, plant-based turkey alternative in-house that has successfully won over even the most die-hard “meat and potatoes” eaters who have sampled it, and we’re excited to showcase it to our clients this year. The rest of the menu features delicious vegan sides, salads and desserts with familiar flavours just as comforting as traditional Holiday fare.

We made the decision to offer a plant-based turkey alternative this Holiday season for a number of reasons:

During our menu development process, our team concluded that the vast majority of turkeys consumed over the Holiday season are not produced in an ethical or sustainable fashion, and were not in line with our values as a company.

Second, it was a significant step to show our commitment to achieving our company’s overall goal of reducing animal products on our menus by 50% by the end of 2018. Making this choice during one of the busiest times of the entire year gave us a big opportunity to make an impact, promote sustainable food choices and make our clients happy at the same time.

Lastly, we strongly believe the dishes we developed provide a “no-compromise” experience for guests accustomed to traditional Holiday fare.

We understand this may be a tougher sell for some groups, and will still have our full a la carte menu available featuring Oceanwise seafood and ethically sourced proteins, should you wish to add or include a meat item to the package. You may customize the Holiday packages to best suit the tastes of your group, just let our team know and we’re happy to take care of this for you.

We sincerely hope you’ll enjoy the menus and consider a plant-based alternative to turkey for your annual Holiday party!

Yesterday morning our owner Drew had the opportunity to appear on CTV Morning Live Vancouver to provide a cooking demo for a classic Fall-inspired comfort food – Mac n Cheese! This completely plant-based and gluten-free dish was a hit with the CTV crew and is a perfect way to enjoy everyone’s favourite rich, satisfying fall dish without the guilt. Drew will also be cooking this dish LIVE on stage at the Richmond World Festival in Minoru Park on Saturday, Sept 1st at 11:45 am on the Safeway Canada Cooking Stage. Admission is Free!

CTV Morning Vegan Mac ‘n Cheese Video

Recipe: Serves 6

For the cheese sauce:

  • 3/4 cup cashews, soaked in water for at least 2 hours (drain water before blending)
  • 1 cup almond milk, unsweetened
  • 1/4 cup diced onion, sauteed in oil for 2-3 minutes until softened
  • 1 cloved garlic, minced
  • 1/4 cup Nutritional Yeast flakes
  • 1 tsp Dijon Mustard
  • 2 tbsp lemon juice
  • 1/4 tsp turmeric powder
  • 1/2 cup boiled or steamed carrot
  • 1/4 cup boiled or steamed orange yam
  • 1 tbsp plant-based butter (such as Becel or Vegan Butter)
  • Pinch of nutmeg
  • Pinch of smoked paprika
  • Salt to Taste

 

Method:

Combine all ingredients in a good quality blender, such as a Vitamix. Blend on high speed for 1-2 minutes until sauce is smooth and consistency is simiilar to a rich cream sauce. Scrape with a spatula into a container and store until ready to use. Sauce can be frozen at this point or used right away.

For the Pasta:

  • 250 gr elbow macaroni brown rice pasta, or similar gluten free pasta
  • Salt
  • Olive Oil

Method: Boil pasta in salted water according to package directions until al dente. Rinse pasta and toss with olive oil, set aside until ready to use.

For the Almond Parmesan Crust:

  • 2 tbsp Finely Ground Almond
  • 2 tbsp Nurtitional Yeast Flakes, finely ground
  • 1/2 tsp garlic powder
  • 1 tsp salt

Combine all ingredients in a food processor and pulse until well-combined. Store in an airtight container until ready to use.

To Assemble:

Preheat oven to 375F. Warm the cheese sauce in a small sauce pot over low heat. In a mixing bowl, pour the warm cheese sauce over the pasta and stir to combiine evenly. Place the mac n cheese into an oven proof container and top with the almond parmesan crust. Bake for 20 minutes until hot throughout and remove from the oven. Garnish with freshly chopped herbs and more almond parmesan, if desired. Served immediately and enjoy!

What a weekend in the city! So many great events were taking place, including the Deighton Cup, one of Vancouver’s flagship style events, and the amazing Surrey Fusion Festival, an annual celebration hosted by the City of Surrey celebrating food, performing arts and culture. More than 150 performers took the stage over the 2 day festival which saw more than 20,000 attendees.

I was fortunate enough to be one of the Chefs selected to perform at the Safeway Canada cooking stage during the festival, and was greeted by many eager (and hungry) attendees ready to watch and learn! I chose to create a plant-based dish to celebrate the abundance of beautiful summer produce available during the summer months. The dish I created was:

Harissa Spiced Chickpea Cakes with Romesco Sauce & Herb and Almond Pesto

It was so wonderful to see the crowd so engaged and interactive throughout the demo, eager to learn ways to create unique and inspired plant-based food. Let’s get started with the recipe, as promised!

  • 1/4 cup roughly chopped cilantro
  • 1/4 cup fresh mint
  • 1/4 cup fresh basil
  • 3 tbsp harissa spice powder (if you choose to make your own, recipe is below!)
  • 1 tbsp salt
  • Juice and zest from 2 lemons
  • 1/4 cup olive oil

Combine all ingredients in a food processor and blend until incorporated. You want the consistency to be even, but not fully pureed. It should look like a rustic hummus.

Place the dough on a large sheet of cling film and roll into a log shape. Keep in the fridge for at least a few hours to firm up.

Breading for Chickpea Cakes:

1 cup coconut milk (in separate bowl)
1 cup gluten free flour (in separate bowl)
1 cup gluten free panic (in separate bowl
1 tsp salt

Add the salt to the coconut milk and set up the ingredients in 3 separate bowls. Take the chick pea dough from the fridge and cut into slices, then form into small cakes. Place the cakes in the flour first, then the coconut milk, followed by the panko. Set aside in the fridge until ready to cook.

For the Romesco Sauce:

  • 3 bell peppers, seeds and core removed
  • 3 roma tomatoes, cut in half
  • 1/2 cup slivered toasted almonds
  • 1 cup cubed day old bread (gluten free bread is okay)
  • 2 tbsp good quality smoked paprika
  • 2 cloves garlic
  • 2 tsp salt
  • 1/3 cup olive oil + extra for sauteeting

In a large heavy sauce pan, heat olive oil over medium high heat. Add tomatoes, garlic and peppers to the pan and season with salt. Pan roast for 12-14 minutes over medium high heat until caramelized and browned. Add. the browned peppers and tomatoes to a blender, and add in the remaining ingredients. Blend on high power, for 2-3 minutes until the sauce is fully blended and smooth. Adjust the seasoning to your taste and set aside.

For the herb and almond pesto:

  • 1 cup parsley, roughly chopped
  • 1/2 cup green onion, chopped
  • 1/2 cup fresh mint
  • 1/4 cup cilantro
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/2 cup olive oil
  • 1/2 cup canola oil
  • 1 tsp salt
  • 1/3 cup slivered toasted almonds

Combine all ingredients in a food processor and blend until the sauce reaches a pesto consistency, thinning out with some extra oil as necessary.

Other garnishes:

Summer Squash, or any seasonal vegetable, lightly roasted
Herbs or edible flowers

To Cook and Plate:

Preheat oven to 350F. Heat a large saute pan with a thin layer of vegetable oil over medium high heat. Brown the chick pea cakes on both sides, for 3-4 minutes/side, and transfer the pan to the oven to continue cooking for an additional 10-12 minutes.

Spoon some of the romesco sauce onto the plate, and arrange the chick pea cakes on the plate. Spoon some of the herb and almond pesto on top, and garnish with the roasted summer squash and herbs or flowers. Drizzle with extra olive oil and harissa spice.

BONUS RECIPE:

Harissa Spice from Scratch!

1 tbsp Cumin Seeds (or 1.5 tsp. Ground cumin powder)
1 tbsp Coriander Seeds (or 1.5 tsp. ground powder)
1 tbsp Caraway seeds (or 1.5 tsp. ground caraway powder
1 tbsp Fennel seeds (or 1.5 tsp. ground fennel seed powder)
1/4 cup Ground dried chili powder (mild or hot per your preference
2 tbsp Smoked Paprika
2 tsp Garlic powder
1-1/2 tsp Sea salt
1 tsp Ground black peppercorns
1 tsp Dried mint leaves (optional)
1/2 tsp Ground cinnamon
1/4 tsp Ground ginger
1/4-1/2 tsp Ground cayenne pepper (optional)

Combine all ingredients in a blender or spice grinder. Blend until evenly incorporated. Store in an air tight jar.

 

And there you have it! A versatile summer recipe sure to impress your next dinner party guests. This is very similar to what we serve in the catering side of the business for family style, plated and canapé events and we are thrilled to share it with you. Enjoy and let us know how it turns out!

We are very excited to announce the launch of our brand new Seasonal Signature Cake Program, available for pick-up from our location at 1312 SW Marine Dr, Vancouver! Previously, the edible works of art created by our talented pastry team were only available at our catered events, making them difficult to obtain for smaller gatherings. Our entire team here at Drew’s Catering & Events is thrilled to announce the launch of Fresh by DCE – a brand new line of high quality, healthy meals to-go which are now available in stores at all 5 Body Energy Health Club locations in Vancouver!

Partnering with the team at Body Energy Club to launch the meals was an awesome experience, and we are excited to help their clients have access to affordable, high quality and nutritious meals designed by our Michelin Chef Sekihata Katsusyuki.

A bit of backstory – back, when Drew started the company in mid-2008, the owner of Body Energy Health Club, was one of Drew’s first regular private chef clients! Drew would regularly prepare healthy, nutrious meals and deliver them weekly to his residence in his trusty Hyundai Accent. Nearly a decade later, as both of their businesses grew, the opportunity to come together and collaborate again on a larger scale was an incredibly rewarding project for both teams.

Our mission here at DCE is very simple: to provide memorable meals for anyone, anywhere. This collaboration with Body Energy Club allows us to a big step closer to achieving our vision as a company.
